Pasta tonight

with cilantro pesto.

  1. That is awesome that you keep making your own pasta! I really can't wait to be back and have my kitchen stuff again!!! And cilantro pesto, eh? I'd like to have a recipe, please!?! ;)

  2. 1/4 c walnuts
    2 c cilantro
    Pulverize in food processor. While running, slowly add 7 Tbsp olive oil.
    Remove to a mixing bowl, and stir in 1/4 c grated pecorino cheese and 1/2 tsp salt.

    Reserve 1/2 c of water from the boiled pasta. Stir pesto into hot pasta, and add the reserved water to the mixture as needed for consistency. Yum!

    **We didn't have walnuts, so we used pecans. Equally good.

  4. You have to buy it at Sam's. Or Fresh Market. Both in Jackson, alas.
